One of the most protocols that leaks a lot of data about you is the DNS protocol.
Since DNS is a fundamental protocol to the internet (it maps domain names to ip addresses, so that you don't have to remember numbers), it is impossible to not use DNS.
Instead, you should encrypt your DNS, and this is exactly when you need DNS over TLS (DoT) or DNS over HTTPS (DoH).
We provide two public recursive DNS servers that support both classic DNS, DoT and DoH. All queries are forwarded upstream over TLS exclusively.
If your laptop/desktop/phone doesn't support DoT natively you can find a suitable client at DNSCrypt.org.
Our DoT DNS servers integrate quite well with pfsense firewalls.
